Heather's Lemon Pound Mini Cakes


It's Pound Cake Day!  Take the Pound Cake Poll, and grab the yummy easiest recipe ever! Happy #PoundCakeDay!

Pound Cake can work for Breakfast, Brunch, Lunch, Dinner, Snacks... The way I make it. Not as much guilt, but still Yummy!  Here is the easiest Pound Cake you can make. 4 easy steps following the box directions. Have a Happy #PoundCakeDay, which can be any day of the week for a Pound Cake Fan! 

Easiest Lemon Sugar Pound Cake / The box Ingredients / Or My Ingredients 

  • A Box of Krustzea Meyer Lemon Pound Cake 
  • 3/4 Cup Water, 1 1/2  (I use skim milk with 2 tsps of vanilla) 
  • 1 egg  (I use 1/3 cup egg whites) 
  • 10 Tbsp melted butter (I use greek yogurt in placed of the butter low fat or Triple Zero.. Regular/ Vanilla/ Strawberry/ Cherry.. any of these flavors taste yummy. 
  • 1 1/2 - 2 Tbsp spoons water (This is for the yummy sugary glaze that comes in the box. Best I have tasted. I can't figure out how they do it)

Box directions work w/ my ingredients too:

  • HEAT oven to 350°F. Lightly grease 8x4-inch loaf pan.
  • STIR together water, melted butter, egg and cake mix until blended. SPOON batter into pan.
  • BAKE 38-42 minutes or until toothpick inserted into center comes out clean. Cool 5 minutes; gently loosen and remove from pan. Cool cake completely before drizzling with lemon glaze.

For Glaze:

  • Whisk together lemon glaze mix (enclosed) 1½ -2 Tbsp water until glaze is desired consistency. Drizzle over cooled pound cake. Allow glaze to set before serving.
