Chocolate Snowball Cookies with Vanilla Ice Cream Recipe

Chocolate Snowball Cookies & Vanilla Ice Cream for Dessert @ Heather and honey Ted's


Happy Vanilla Ice Cream Day! This dessert Rocked during the weekend, and it would Rock today w/ Vanilla Ice Cream being Queen! During a recent #GroceryShoppingDateNight w/ honey Ted, I ran across a a big time sale on a Shortbread Cookie mix.I put it to yummy use this past weekend since Ice Cream was Queen with Ice Cream Day happening on Sunday. I thought a Cookies & Ice Cream dessert would be perfect after a Pillsbury crust created Pizza for dinner. I found a recipe I tweeked a bit for Chocolate Snowball Cookies. They turned out yummy. Plus Adding Vanilla Ice Cream hit the spot. Since today is Happy Vanilla Ice Cream Day... perfect yummy for today, or any day you're craving a Chocolate Cookie to pair w/ Ice Cream! 

Chocolate Snowball Cookies w/ some Heather Twists

  • 1 package of Sugar Cookie mix (I used the shortbread cookie mix I had on hand)
  • 1/2 cup Butter or Margarine melted
  • 1 Egg
  • 1/2 cup of Flour (original recipe called for 1/4 cup)
  • 1/3 cup of Cocoa Powder  (original recipe called for 1/4 cup)
  • 1 tsp Vanilla (instead of Almond extract) 
  • 2 Tbs of Hershey's Chocolate Caramel Coffee Creamer
  • 1/2 of cup crushed up Almonds (used more flour & cocoa instead)
  • 3/4 cup of Powdered Sugar 
  • Hershey Kisses for each cookie. (I used a Dark Chocolate Mint Bar in half  / and Semi- Sweet Chocolate Chips in the other half of the cookies)

Preheat oven to 375


  • In a large bowl mix together the cookie mix, butter, egg, flour, cocoa, vanilla and coffee creamer until a soft dough forms ( My Kitchen Aid Mixer Rocked the mix!)
  • Shape the dough into 1/2 - 3/4 inch balls
  • Wrap around the chocolates
  • Place on a cookie sheet about 2 inches a part.
  • Bake 8-10 minutes until set (I baked about 8 1/2 minutes)
  • Extra chocolate melted w/ a tsp of vanilla in the microwave.  Heat 20-30 seconds at a time. Heat as needed to melt until thickness you can dip the cookie balls in it. Add a bit of water to make it thinner. Careful not to burn. It heats up fast
  • Cool the cookie balls in the refrigerator for around 10 minutes. Cool enough to handle and dip in chocolate. Once dipped, but them back in t he frig to set.  
  • Once the cookie balls dipped in chocolate are set, roll in powdered sugar.  Put in the refrigerator again to cool completely and set. 
  • Set them out to get room temperature. They also taste yummy microwaved about 5-8 seconds. Put a couple in a bowl w/ ice cream (vanilla here) 

BAM! Ready to Enjoy! I almost added chocolate sauce and whip cream. Maybe next time. Make an Extra Sweet Chocolate Snowball Sundae!
