Cinnamon Roll Poke Cake

I ran across a Delish recipe that seems to take care of the sweet comfort food cravings of Cinnamon Rolls and Cake! It says it tastes Exactly like a Cinnamon Roll! This got me excited about trying it. Yummy Cinnamon Rolls seem to take a much longer time to make.  For some reason when I've tried, they don't turn out the way I picture them in my head. Usually a bit chewier, and not quite the taste I wanted. I consider myself more Cinnamon Roll Challenged, when it comes to making them.  If you have the same problem, and cake is a fav for you too, then maybe this recipe will satisfy the cravings! honey Ted, Rudy & I put this recipe in action to see if it matches the reality. Does this Cake taste like a Cinnamon Roll?

  • Cooking spray
  • 1 box white cake mix, plus ingredients called for on box
The cake mix ingredients we used 3/4 cup of milk & 1/ 4 cup of Funfetti Coffee Creamer rather than water

  • 1 (14-oz.) can sweetened condensed milk
  • 4 tbsp. melted butter
  • 1/2 c. packed brown sugar
  • 1 tsp. cinnamon
  • Pinch of kosher salt

  • 1/2 c. heavy cream
  • 1 (8-oz.) block cream cheese
  • 4 tbsp. butter, softened
  • 1 c. powdered sugar
  • 1 tsp. pure vanilla extract
  • Pinch of kosher salt

Make cake:

  • Preheat oven to 350°. Grease a 9"-x-13" baking pan with cooking spray. Prepare cake according to package directions. Pour batter into prepared pan and bake until a toothpick inserted in middle comes out clean, 20 minutes. Let cool.

Make filling:

  • In a medium bowl, whisk together sweetened condensed milk, butter, brown sugar, cinnamon, and a pinch of salt.

Make frosting:

  • In a large bowl using a hand mixer, beat heavy cream until stiff peaks form. In another large bowl, beat cream cheese and butter together until no lumps remain. Add powdered sugar and beat until smooth, then add in vanilla and a pinch of salt. Fold in whipped cream until just combined.

Creating the Poke Cake:

  • Using the bottom of a wooden spoon, poke holes all over cake. Pour filling over and use a rubber spatula to push into holes. Frost with cream cheese frosting. Refrigerate 20 minutes before serving. Chopped up a handful of cinnamon chips to sprinkle on top before putting it in the refrigerator. The cake was in the fridge for a few hours. Taking it out to be room temp before eating it.

We found it pretty easy to make. It was a team effort, with honey Ted doing a fabulous job on frosting duties w/ Rudy's help ...
