Sweet Cinnamon Cake w/ Holiday Kicks!


honey Ted & I did a tag team cake bake for the Thanksgiving lunch at work. It's a cake you could eat just about anytime of the year, but the added Holiday Kicks make it yummy this time of the year. It's an #EasyYummy cake / dessert to make. 


  • 1- Pillsbury Cinnamon Bun Cake Mix & the Cinnamon Bun Frosting (careful you can eat this by itself out of the container) - Seasonal / we found them at HEB 
  • 1/3 cup of Eggnog  / or Vanilla / Vanilla Cinnamon/ Sweet Cream type coffee creamer
  • 1 - 2 tsps Vanilla
  • 1/2 cup Cinnamon Chips
  • 10-12 Sweet Cinnamon Kit Kats cut & crumbled up. These are new. Found them at HEB too
  • The rest of the ingredients what the box mix calls for:
    In place of the cup of water we used 2/3 cups of Milk & 1/3 of the Eggnog (or the coffee creamer) & Vanilla


  • Pre-heat oven 350
  • Eggs called for from the mix at room temperature is the best. 
  • Bake in your favorite pan. We did 2 - 9 inch circle pans to make 2 separate smaller cakes. One for work, and other at home. I baked the work cake in a glass pie plate pan, which worked well. Parchment paper on the bottom of them, after you grease them, is helpful for any sticking in the middle.The cinnamon chips fall down sometimes, so no worries w/ parchment paper on the bottom. Easier to get out of the pan too. 
  • Mix all the ingredients on low to blend together. Beat on medium for about 2 minutes. Split the cake even amounts. Or what works the best w/ the pan you're using. Bake 20-25 minutes if there are 2 smaller ones. 25-30 minutes if it's a longer sheet cake type pan. You can pretty much use the box times, but take off 5 minutes, just in case, and add if / when needed. 
  • When the cake comes out of the oven, I put a bit of the frosting on top. Spread it lightly to soak a bit in the cake.
  • Let them cool.  Refrigerator cooling for quicker cool if needed. Transfer them to a plate you'll serve with, or leave in the pan, like the glass pie plate pan I used. 
  • Frost them
  • Sprinkle broken up Sweet Cinnamon Kit Kats over the top. 
  • You can eat right away. Also tastes great letting it chill in the refrigerator over night. 
  • Set the cake out an hour or so before your ready to eat it. If you don't enjoy cold cake.

You can do this w/ spice cake & vanilla / cream cheese frosting and use other chocolate goodies.  Lots of variations. This is our holiday one we created this year. The Mix & Frosting are excellent as is with no variations too. That's even easier.

BTW: We've also found  out Sweet Cinnamon Cake w/ Holiday Kicks is really yummy for breakfast too. The eggnog taste really pops w/ the cinnamon and the light chocolate cinnamon crumble from the Kit Kats when the cake chills another day. Makes it hard to save for dessert again ... breakfast worked!
