honey Ted & I are big time snackers, I'm a candy girl.. Spice drops... Brachs pumpkins this time of year .. big time Sweet Tooth. honey Ted is a potato chip, Oreo cookies, chocolate... buttered popcorn kind of guy. We decided maybe we should do some healthier snacking. This is where Power Up Snacks came into our lives

Knowledge is power, and so I checked out some Power Up 411. Power Up is a company that uses premium hand selected ingredients. Power Up Snacks  are made to order so they don't sit for months in a warehouse before it gets to you. This makes Power Up Snacks incredibly FRESH!  That is the first thing honey Ted & I noticed when we got into our first bag of Power Up - Protein Packed Trial Mix.  The fruits were soft.The nuts fresh &  crunchy, but not too hard. The flavors are fresh, and true to their natural taste. Plus soft on the mouth & teeth. This is really important to me since I have major teeth issues.

Of course, it wouldn't take long for me to try baking w/ Power Up Snacks. Here's a yummy recipe, that unlike most of my recipes, has no added sugar. It's sweetened by the natural sugars found in the Power Up Snacks and real fruits I added in the mixture. honey Ted & I spent our Sunday in our PJs and got our Power Up Brunch Bake Grub On.  

Power Up Oatmeal Brunch Bake 
Preheat oven 350 degrees  Lightly grease a 9 inch square glass baking dish

Ingredients:

  • 2 cups Oatmeal (Regular or Organic - not instant)
  • 1/2 tsp. Cinnamon (Trader Joe's) 1 tsp if you enjoy more spice
  • 1/2 tsp. Pumpkin Pie Spice (Trader Joe's) 1 tsp if you enjoy more spice
  • 1/2 tsp Apple Pie Spice 
  • 1/4 tsp Clove 
  • 1/4 tsp Ginger (Trader Joe's)
  • 1/2 tsp baking soda -optional.. bars are a bit flatter without
  • 1 1/2 cups Skim Milk (2% or soy, almond, coconut.. your favorite types of milks)
  • 4 0z / 1/2 of a 1 serving container of Plain Fat Free Greek Yogurt
  • 2 large Eggs or 1/3 cup Egg Whites  - I used egg whites
  • 2 tsps Vanilla
  • 2 TBs of Honey (optional) I didn't use it
  • 3/ 4 cup Power Up High Energy Trail Mix / or your favorite combo
  • 1 small Apple peeled, core taken out and chopped up / mix w/ 1 tsp of cinnamon
  • 1/2 - 2/3 cup of Blueberries
  • 1/4 cup of  chopped up Dates (optional)

Directions:

  • Mix the oatmeal, spices, baking soda and the Power Up Snack Trial Mix in a bowl 
  • Another bowl whisk milk, yogurt, vanilla & eggs (honey if you use it) together. Mix in the fruits/ apples, blueberries & dates
  • Pour the liquid fruit mixture in the dry ingredients. Mix well. 
  • Pour in the glass pan. Spread out the mixture so it's even when baking
  • Bake for  30-40 minutes. It should be a nice brown on top. Check at 30 minutes. Poke w/ a fork. If the mixture seems more milky, bake for another 5 minutes, and check again. It should be moist, but not milky when you poke it. Let it cool! Cut in bars or chunks.. whatever you feel. 

Topping:

  • 1 TBs of Peanut Butter ( I used PB2 Cocoa version)
  • 1 TBs Plain Fat Free Greek Yogurt

Mix them together. Put on top of the Brunch Bake Bar! Sprinkle w/ a TB of the Power Up Snack Trail Mix combo you used. You can eat without a topping or whatever is your favorite topping for your Power Up Snack Trail Mix Bake!  Eat & Enjoy!!! 

Other Thingies:
You can mix up the fruits and the Power Up Snack Trail Mix combos. Use more or less or other spices you enjoy. It's a Power Up Brunch Bake you can create just for you. This will keep in the refrigerator at least a week if not longer depending on the combos / and containers you use. You can grab up chuncks, and heat for 10 seconds in microwave. Add peanut butters, yogurts .. sprinkle of Power Up Snacks on top. You're ready for breakfast, brunch ...  even a snack. Make it how you want. Power Up Your Life!
