Sweet Potatoe Pancakes made with Love

I had a long weekend by taking a couple days off from the station, and getting a dental implant. On top of the implant, my mouth decided to have another issue, which I have an appointment at the end of the week for a possible root canal. I'm tired of the Dental Drama. It's a common w/ me. Bad genetics.  Anyway, I've been eating soft foods for while, and more to come.  honey Ted has been taking such good care of me.  Whether it's getting me ice packs for my swollen face, making sure I'm taking my meds, and doing whatever he can. I'm Blessed, and Thankful to have him in my life.  Last night, he made dinner... Sweet Potatoe Pancakes. They were amazing, and soft and fluffy enough to eat using 1 area of my mouth.  I found out today is National #PancakeDay, so I thought I would share the recipe.  

honey Ted's Easy Yummy Sweet Potato Pancakes 
(He eyeballs it, so this is a general amount) 

  • 1/2 of a regular size Sweet Potatoe mashed up - no big chunks
  • 3/4 a cup of pancake / waffle mix 
  • 1/2 cup of milk - any type you enjoy. Might need more if too dry
  • 2 tsps vanilla
  • 2 tsps cinnamon (optional)

Mix it all together.  honey Ted said it will be like a pudding consistency before it's chilled, to compare for thickness of the batter. Pour in a buttered / greased  and warm frying pan /medium heat. Takes a few minutes to brown, then flip. Brown the other side. Butter it, or whatever you enjoy with your pancakes. Serve with bacon, eggs.. whatever you want. I had a Pumpkin Yogurt & Peanut Butter dip for the pancake. It was really yummy! 2 tablespoons of Trader Joe's Pumpkin Fat Free Greek Yogurt (seasonal) with tablespoon of your favorite PB. PBC2 is Awesome!
