Another Big Cookie Win!

I was so excited to finally make Big-'ole Thick Chocolate Chip Cookies ... Bakery Style .. that Rocked!  A combo of a few recipes got me there. So I thought I would try another combo using one of my favorite seasonings Cinnamon and a couple of changes ... 

Kicked Up Big-ole Cinnamon Cookie


  • 1 stick margarine / cold out of the frig 
  • 3/4 cup of light brown sugar
  • 1/4 cup white sugar
  • 1 large egg cold 
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 cups of flour (with 1 tablespoon taken out)
  • 1 tablespoon of cornstarch
  • 2 tablespoons of cinnamon
  • 1 cup cinnamon chips
  • 1/2 cup white chocolate chips


  • 3 tablespoons of sugar mixed with 1-2 teaspoons of cinnamon - cinnamon sugar sprinkle on the cookie dough right before putting in the oven, and right out of the oven when cooling. 


  • Using a stand up mixer (or hand mixer) , mix the margarine with the sugars until it's fluffy creamed like. 
  • Add the egg and vanilla extract until it's combined well. Don't over mix.
  • Add the baking powder, salt, cornstarch, cinnamon and flour- mix slowly until it's combined well, but don't over mix. 
  • Fold in the cinnamon & white chocolate chips w/ your clean hands. Use flour on your hands to prevent sticking. Don't try to form the dough w/ the chips, just fold them in. 
  • Divide the dough into 6 parts for Big-ole thick sized cookies.  Put the formed dough on a cookie sheet/ pan w/ parchment paper. Don't ball it up. Put in the refrigerator for 30 minutes.
  • Bake at 375 for 17-18 minutes. (sprinkle w/ CS before baking) Golden on top. You can do the toothpick test. It shouldn't be sticky, but a bit gooey is alright. They set nicely. (sprinkle w/ CS out of the oven) 
  • Let them sit for 5 minutes on the cookie sheet / pan. Then place them on a cooling rack to fully cool and set. Once set. Enjoy!

Future Bakes:

  • Add in cream of tarter in the mix. Maybe 1-1 1/2 tablespoons to make Kicked Up Snickerdoodle Big-ole Cookies. 
  • A Third variety adding cocoa / chocolate for chocolate chocolate chip big, thick and yummy chocolate lovers cookie.
