A Lobster Hey!

Today is National #LobsterDay (6/15)!  Get the melted butter ready! Or maybe you'd rather set it free! Whatever works! If you're into more of the melted butter vibe, then you might be interested in some recipes that go a bit further than just melted butter. They look pretty yummy!  Click here! Here's one that caught my eye! 

Lobster Grilled Cheese.. although it has a lot more to it than cheese, so I consider it a Lobster w/ Melted Cheese Sandwich.  
Either way, it looks pretty yummy!  Here's what you'll need..


4-6 tablespoons (1/2 to ¾ stick) butter, room temperature

1 teaspoon chili paste

½ cup (4 ounces) Wisconsin Mascarpone Cheese, softened

2 scallions, thinly sliced (white and green parts)

¼ cup tomatoes, small dice

4 slices country-style white bread

4 thin slices Wisconsin Provolone Cheese

½ cup arugula

1 cup cooked Maine lobster, coarsely copped
