Chocolate Poke Cake Just Because ...

Over the weekend, I tried a new cake recipe a Facebook friend Jacob posted. It was a Bailey's Chocolate Poke Cake. honey Ted & I got some of the ingredients we didn't have at home during our Grocery Shopping Date Night Out.  When I was getting ready to bake it, I thought we had Baileys and we didn't. Doh... well I decided I would be inspired by the recipe. I did a bit of substituting of what I had in the frig at the time that I hoped would work out.  I remember honey Ted had tried a new coffee creamer.. Oreo Cookie flavored. He said it tasted just like Oreo cookies w / in your coffee.  So I figured what the heck...

I made the Oreo Cookie Dark Chocolate Poke Cake!  There were some Rocky Road Oreo Cookies left in the pantry, which got mixed w/ some mini chocolate chips for toppping to go w/ the Oreo theme. For the cake topping, I created it  w/ cool whip rather than heavy whipping cream.  I got dark chocolate chips instead of semi-sweet, by accident! Here's the ingredients to the original cake, and what I changed / substituted.. 

My changes from the original recipe:

Bailey's (Oreo Dark) Chocolate Poke Cake:

  • 2 cups (260g) all purpose flour
  • 2 cups (414g) sugar
  • 3/4 cup (85g) natural unsweetened cocoa powder
  • 2 tsp baking soda  1 tsp baking soda & 1 tsp baking powder
  • 1 tsp salt
  • 2 large eggs -room temperature
  • 3/4 cup (180ml) milk
  • 1 cup (240ml) vegetable oil - 2 sticks margarine (butter would work too) 
  • 1 cup (240ml) Baileys Irish Cream, divided  - Oreo Cookie Coffee Cream 1/2 cupish w/ splash of milk both times needed in cake & the poke part too
  • 1 tsp vanilla
  • 3/4 cup (180ml) boiling water
  • 1 cup (240ml) sweetened condensed milk - Eagle brand is a 14 oz can, so I used a bit more liquid Oreo Cookie Creamer
  • 3/4 cup (127g) semi sweet chocolate chips - bag of dark chocolate chips created more of a fudge layer rather than going into the holes, but some got in.. very rich & chocolatey

WHIPPED CREAM TOPPING

  • 2 cups (480) heavy whipping cream, cold - regular size cool whip tub-there was a bit left after 2 cups.. used it all
  • 3/4 cup (86g) powdered sugar - 1cup
  • 1/4 cup (29g) natural unsweetened cocoa powder - 1/3 cup
  • 2 tbsp (30ml) Baileys Irish Cream, optional - Oreo Cookie Coffee Creamer
  • 1/2 tsp vanilla extract - 2 caps full vanilla extract 

ADDITIONAL
Mini chocolate chips - big handful w/ 5 chopped up Rocky Road Oreo Cookies
Chocolate sauce - I didn't use chocolate sauce this time around, but I did have a bit of vanilla ice cream, which balanced out the extremely fudgy chocolate cake nicely.  If you enjoy rich chocolate, and a bit of Oreo Cookie flavor, then this is the cake for you.

This makes a big 9x13 cake which I brought in today for my co-buds to enjoy if they would like. I found out today is #JustBecauseDay.  You do something for yourself /and for others/ that makes you Happy. So today, I say Oreo Dark Chocolate Poke Cake can be enjoyed for Lunch, Dinner, Breakfast, Dessert..whenever you want. Sharing w/ others because you want too. I'm asked sometimes, why do you bake when it's just you & honey Ted. Well, I'm not a pretty presentation baker, but I've always enjoyed getting my baking on at times.  I've found it's a good stress reliever for me. I share, so honey Ted and I can fit our clothes.  If others enjoy it, then that's a bonus too. Making someone feel good w/ a little treat you created, Just Because...

This Chocolate Cake could also be an inspiration of many things in life. You run across a recipe. Realize you don't have everything, but you find a way to make it your's and yummy anyway. The inspiration behind it,from someone else,makes it even more special. If it comes out a Yummy Success, that is Awesome! If it doesn't turn out the way you want, then you learn from that, and try again. Sometimes it takes more than just once to get the Cake you are looking for.  The adventure of creating the Cake, with the journey that got you to Success!  Make your 'Chocolate Cake' everyday, or any day. you feel the urge.
