Here's a yummy substitute honey Ted & I discovered while social distancing this weekend thanks to COVID-19. We decided to make meatballs and spaghetti.  We had hamburger, sauce, noodles and all that needed to be included in the making of meatballs. Until I realized ... no bread crumbs or crackers to crunch up to bind the meatballs.  honey Ted looked in the pantry and brought out 'Pizza Pringles'. They tasted good. They should surely taste decent in a meatball right?!  They got crushed up and included in the meatball mixture.  The end result .... YUMMY!  Pizza Pringles were even better than bread crumbs or crackers I've used in our past meatball making times. Just the right amount of binder, and lots of yummy flavor. Pizza Pringles, and honey Ted saved the MEATBALLS!

Here's the recipe if you'd like to try it for yourself. Let me know if / when you do.

    Pizza Pringles Meatballs & Spaghetti

    Ingredients:

    • 1 lb hamburger
    • 1/2 can of Pizza Pringles
    • 1 egg
    • 2 tablespoons Italian season ( or your favorite)
    • 1 tablespoon garlic powder (1/2 if you don't like a stronger season ... or more if you do. You can use real garlic if you have it)
    • 1 tablespoon onion powder  (1/2 if you don't is a stronger season.. or more if you do.. Use chopped / minced onions if you have it)
    • 1 jar of your favorite spaghetti sauce (we used 1/2, but you can use it all if you enjoy saucy meatballs)
    • 1/2 box of spaghetti or your favorite noodles

    Directions:

    • Wash your hands again.  Butter / spray pam an 8x8 pan and line the bottom w/ parchment paper. Side it aside.  we used glass
    • Put the hamburger, crushed up Pizza Pringles, the egg, seasonings in a mixing bowl. It's easier to just dig in w/ your hands and mix it together.
    • Form the meat into balls, and place in the baking pan

You can bake them right away. Or if you make them the night before and have them covered in the frig until you're ready to bake them the next day, even better w/ the seasoning.

    • Bake for 20 minutes in a preheated oven at 350 degrees
    • Add the sauce. Use 1/2 to 1 jar.  I spooned 1/2 of the jar on the meatballs and made sure they were covered
    • Bake w/ the sauce another 30 minutes. AFter 15 minutes, turn the meatballs and cover w/ sauce. Put them back in the over for the other 15 minutes.
    • This is a good time to grab a sauce pan fill 3/4 of the way with water w/ a pinch of salt.. boil the noodles to your liking. drain the water. Leave the lid on the pan w/ the noodles to keep warm and ready for the meatballs coming at it.
    • Sprinkle your favorite cheese on top of the meatballs. Stick them back in the oven to melt 5-10 minutes.
    • Take them out of the oven. Let cool, and serve on top of the noodles.

The breadsticks came from Trader Joes. You can freeze those and thaw what you want. They are very tasty if you happen to find them.  Might think about putting Pizza Pringles on your next grocery list- honey Ted found them at Randall's. They've been spotted at Target too.  Enjoy!  Looking forward to leftovers .. meatball sandwiches / pizza topping ... all yummy ways to Rock some Pizza Pringle Meatballs!
