Here's a quick & yummy newbie recipe I tried that really could be eaten anytime of the day regardless of the 'cake' in the title.

Peanut Butter Oatcake in a Mug 

Entire recipe: 168 calories, 3.5g total fat (0.5g sat fat), 459mg sodium, 25g carbs, 4.5g fiber, 1.5g sugars, 11.5g protein

Prep: 5 minutes
Cook: 5 minutes or less

Ingredients:

  • 1/4 cup old-fashioned oats
  • 2 tbsp. powdered peanut butter   I use PB2 Regular & Cocoa  
  • 1 tbsp. (about 1/2 large) egg white or fat-free liquid egg substitute
  • 1/4 cup of water  (I did non-fat milk) 
  • 1 tbsp. flour (whole wheat, if you’ve got it)  
  • 1/2 tsp. baking powder
  • 1 packet no-calorie sweetener  (I passed ) 
  • Dash cinnamon
  • Dash salt (I passed)

*Adding another tbsp of PB2 you could  use as a topping / maybe a bit of Greek yogurt on top too. 

Directions:
Combine all ingredients in a microwave-safe mug sprayed with nonstick spray. Add 1/4 cup water, and mix well. Microwave for 2 minutes, or until set.

I found the 'Oatcake in a Mug' to be more muffin like in texture rather than cake, but I was all good with it. It's not anywhere near overly sweet, especially if you don't use the sweetener it calls for. I may try a tbsp of honey next time. I see this being created with other add ins and variations (fruit, chocolate chips) in the very near future. Mine is darker in color since I used reg & cocoa PB2. Good for you Yummy! Heather R.
